honestly i think it depends on your tastes! keep you list simple but make sure you have mostly fruits and veggies! here’s my rough list, many of these things are dry goods which only need to be bought every month or so.
- veggies
- lots of green veggies
- favorite fruits
- breakfast foods (oatmeal, cereal, more veggies)
- brown rice or barley or quinoa or wild rice
- beans (black, pinto, white, lentils, garbanzo….whatever you like)
- dried fruit and seeds
- whole grain pastas
one of my biggest personal mistakes when starting out vegan was eating too many carbs. stick with LOTS of fruits and veggies as they are the most nutrient rich. and be creative! eat what you like and don’t be afraid to try new foods!
